One-pan chicken veggies skillet for an easy healthy dinner
This chicken skillet with sweet potatoes and broccoli is my go-to healthy meal that takes 30 minutes and a handful of ingredients. Plus, my mum's avocado hack works!
This one-pan chicken and veggies meal is my go-to recipe when I feel like I want something healthy and nutritious but I also don’t want to spend too much time cooking. The whole dish is made in one pan or skillet and uses nutritious and affordable ingredients like chicken thighs, broccoli, sweet potatoes, onion and garlic.
This recipe takes less than 30 minutes and can be served as dinner or lunch. If you do a little prep ahead of time (e.g. have chicken and vegetables cut up and stored in the fridge), you can have this on the table in 20 minutes!
And finally, it might seem very simple with only garlic, salt and pepper as the seasonings, but trust me when I say it’s very tasty. You can also pimp it up by adding other ingredients like chopped tomatoes or sun-dried tomatoes, capers, olives, various spices, chili or lemon juice.
It’s suitable for those following a gluten-free, paleo, Whole30 diet. It’s high in protein and fibre and is a good source of healthy carbohydrates.
This one-pan chicken and vegetables dish is great for meal prep as it keeps well in Tupperware containers for up to 3 days.
Ingredients
For chicken
4 chicken thighs, skinless, no bone, cut into bite-size squares
1 teaspoon ground black pepper
1 teaspoon salt
2 tablespoons olive oil
1/4 cup water
For veggies
1 tablespoon oil
250 g / 9 oz sweet potato, peeled and diced into small cubes
1/2 large onion, sliced
1/2 tsp pepper
1/2 tsp salt
3 cups broccoli florets, about 200 g / 7 oz
3 cloves garlic, diced finely
My mom’s avocado hack
Has your avocado gone brown again? Definitely one of the worst 1st world problems!
Avocados can turn brown quickly once they are cut open and the flesh is exposed to oxygen. But there are a few methods to slow down this process. In the past, I have tried lemon or lime juice and wrapping the avocado tightly in Clingwrap to keep away the oxygen. This weekend I learnt a new avocado hack from my mom - raw onion!
She placed half of the cut red onion (can be any onion) next to the cut avocado in an airtight container. Turns out the sulphur compounds in the onion can help slow down the oxidation process that causes browning. And it works like a charm!
