Egg salad with ham & pickles
If you’re looking for a simple and healthy salad with boiled eggs, this little recipe is for you. It’s a simple and quick-to-make egg salad with pickles, ham, a little onion for sharpness, and mayonnaise.
Once you have hard-boiled eggs, this dish comes together in 5 minutes!
I sometimes make it as a light, protein-rich breakfast or a post-workout grab. If you wanted to turn it into a more substantial meal, this egg salad can be used as a filling in a wrap or sandwich OR you can serve it on top of some quinoa, pasta or jacket potato.
It’s also a good recipe to use up any leftover hard-boiled eggs like during Easter or if you’ve made a bunch as part of meal prep.
The full recipe is on the blog but here are the basic steps.
First, you need hard-boiled eggs. So, bring a small pot of water to a boil and submerge your medium to large eggs with a spoon. I cook mine for 9 minutes for the yolk to be just a tiny bit jammy. If you like your eggs properly HARD-boiled, go for 10-12 minutes.
Drain and submerged the cooked eggs under cold water as soon as possible. Once the water gets warm, refill it with cold water again. Allow the eggs to cool slightly before peeling.
To make this egg salad, you will need good quality ham of choice and some gherkins or pickles. I also like a little finely diced red onion for sharpness and aroma (and it's good for you) but you can go without or you can adjust the amount used. Green onions or chives are great substitutes.
Mayonnaise and a little pepper are all I use for the egg salad dressing. You could make it with sour cream and a little salt and mustard if avoiding mayonnaise.
Chop everything up and mix it. That's it!
What else to do with hard-boiled eggs?
There are many ways to use up leftover hard-boiled eggs. Here are a few ideas:
Eggs on toast: Chop the eggs and top a piece of toasted sourdough; you can do avocado, egg and dukkah or try my egg with tomatoes, dill and feta here.
Devilled eggs: Cut the hard-boiled eggs in half and remove the yolks. Mix the yolks with mayonnaise, mustard, and any other seasonings you like. Spoon the mixture back into the egg whites for a tasty appetiser. Check out my deviled eggs three ways post here.
Egg lettuce cups: These are great for a quick snack or finger food. Cut the eggs in halves and top with a dollop of spicy mayo or curry-spiced mayo; top with pickles or sliced cucumbers and serve in lettuce cups. Here is the recipe.
Cobb salad: Chop up the hard-boiled eggs and use them as a topping for a salad with lettuce, bacon, avocado, tomato, and blue cheese. Or try my grilled chicken Cobb salad with pineapple and chipotle dressing.

Tuna salad: Mix chopped eggs with canned tuna, mayonnaise, and any other seasonings you like for a protein-packed lunch. Try my tuna salad here.
Ramen noodle bowl: Place sliced hard-boiled eggs into a ramen noodle bowl with sliced green onion, mushrooms and spinach leaves.
Creamy chicken salad: Add diced boiled eggs to a creamy chicken salad. Try my mushroom chicken salad with walnuts here.
Salade Niçoise: Mix lettuce, green beans, potatoes, olives, cherry tomatoes, tuna, and sliced hard-boiled eggs for a traditional French salad. Try my sardines Nicoise salad as a template here.
Scotch eggs: Coat hard-boiled eggs in sausage meat and breadcrumbs, then deep fry them for a delicious snack or appetiser.
Pickled eggs: Place peeled eggs in a jar with pickling spices and vinegar for a tangy and flavourful snack.

A fridge surprise salad with tuna, red Cheddar, sweet corn, avocado, cherry tomatoes, spinach, green onions and Kewpie sesame dressing. So random but very tasty and nutritious I must say.
A super easy side dish to go with one of our mains this past week. I threw together a bunch of vegetables in a baking tray and tossed them with olive oil, garlic powder, onion powder, paprika, dried herbs, chilli and some salt. Roast for 20-25 minutes at 200 C/ 400 F, stir halfway through.
